  • Sea bass ballotine with nori seaweed, pear chutney, Peruvian oca risotto and soy foam

  • Smoked duck breast prepared in-house, reduced jus, shredded and red cabbage tapioca

  • Gin, lychee and hibiscus granita

Flat

  • Heart of veal rump cooked at low temperature, meat jus with lemon-thyme and Jerusalem artichoke à la barigoule

  • Seared monkfish fillet, langoustine jus with Espelette pepper and colorful carrot linguine Vichy style

Hot and cold cheese (optional)

Dessert

  • Two-chocolate shell, praline whipped ganache and hot chocolate sauce

  • Smoked pepper shortbread biscuit, Granny Smith panna cotta, mascarpone cream, mint meringue and apple sorbet

Set menu on the evening of February 14th, served from noon onwards and also on Saturday February 15th.
